Anaerobic yeast fermentation is an innovative processing method that enhances the flavor profile of coffee. In this process, freshly harvested coffee cherries are placed in sealed, oxygen-free tanks, where specific strains of yeast are introduced to initiate fermentation. The yeast breaks down the sugars in the coffee cherries, producing a range of unique and complex flavors. This anaerobic environment prevents unwanted microbial activity, allowing the yeast to fully develop the desired taste characteristics. The result is a coffee with heightened acidity, enhanced sweetness, and a distinct, vibrant flavor profile that stands out from traditionally processed coffees.
La Bastilla Coffee Estates, nestled in the north-east region of Jinotega, Nicaragua, is celebrated for its exceptional coffee. Located within the embrace of the Cerro Datanli El Diablo natural reserve and just a few kilometers from Lago de Apanas, Finca La Bastilla offers a tropical paradise rich in diverse flora and fauna, thriving in deep, fertile volcanic soils. Since 2003, the farm has proudly held Rainforest Alliance certification and continues to strive for excellence. Across its two farms, Finca La Bastilla and Finca Santa Luz, the estate employs approximately 50 permanent staff and up to 600 temporary workers during the harvest season.
To maximize the unique potential of each coffee, micro-farms have been established throughout the estate, allowing the diverse microclimates to shine through. Each micro-farm is further divided into lots, which are distinguished by the specific variety of coffee and the altitude at which it is grown.
La Bastilla also boasts its own micro-mill, where each coffee is carefully wet-milled and dry-milled. With a wide range of coffee varieties and meticulous control over the processing, La Bastilla produces over 150 distinct micro-lot coffees, including custom offerings tailored to specific requests.
